Hey hey! I hope you’re night is going well!
Tonight it was only me, myself and I… no Paul, no boys. So what am I going to do for dinner? I was really craving a huge salad since I hadn’t had any veggies all day. So when I got home I took some salmon out of the freezer, placed it under running cold water until it was thawed. Took my veggies out and made this wonderful salad! For the salmon I rubbed it in a little extra virgin olive oil, salt & peppa and grilled it for about 5-6 minutes on each side. I made extra salmon for tomorrow’s lunch at the office. Isn’t that clever? lol!
I’m sure for you gals and families can make this recipe and add a few extra items like rice & bread to make it a more complete meals… specially for those with picky eaters!
Oh, and don’t forget to sprinkle it with a little lemon juice.
And what about for dessert you may ask? Bananas + strawberries + pineapple + 1 tablespoon of peanut butter + whipped cream + chocolate syrup. Well, I wanted to make a banana split but I couldn’t find my banana split boat! Sooo….
I sliced the bananas and piled everything on top! Healthy & fresh… my kind of dessert
