Look what I found! Coconut flour! I’ve been looking for it for a couple of weeks and finally found it at Sprouts today. I love the fact that is high in fiber and has a sweet flavor already. I think my oatmeal protein pancakes will be getting a make over pretttty soon! Stay tuned for those.
I found this recipe on the Food Network website and knew right away that I had to make it. It has excellent reviews and looks simple enough to make on a weeknight… can’t go wrong with that!
I’m glad I gave it a try because it was delicious! It’s definitely going to be a staple dish in my kitchen. A made a couple of changes since I had to improvise: instead of yellow peppers I added yellow zucchinis. I also didn’t add capers since I didn’t have any. See the link to the recipe below.
