Tomorrow our department is having a potluck at work so I’m moving my cheat meal from Saturday to tomorrow. I want to enjoy all of the yummy foods that people bring! Management is providing the turkey & fixings and desserts will be brought by the rest of the employees. I’m bringing Pumpkin Whoopie Pies so I’ll be baking all afternoon! But guess what? That means I finally get to share this recipe with you! I’ll tell you more later about what happened last time I made them and how they disappeared lol!. Stay tuned for that recipe 😀
I’m lucky to work from home today so at least I won’t spend my busy day in traffic. I have lots of things to do so I have to make sure I stay on track. Here is what I have on my plate today:
6:10 – Wake up/wash face/make coffee
6:30 – Start working
8:15 – Take a quick break to make French Toast for brekkie
11 to 12 – Lunch: go to the grocery store to pick up items for the whoopie pies
12:00 – Back at work
3:30 – Log off from work
3:30 – Blog
4:00 – Start making whoopie pies
5:30 – Make dinner
7:00 – Eat dinner
8:30 – Go to the gym: Shoulders & Biceps
10:30 – Post workout shake/rest
11:15 – Shower
11:45 – Bedtime
I’m exhausted just typing this!
I do have to share with you my brekkie though. I’m addicted to it! It’s fast, healthy and very delicious. I already shared this with you but I need to reinforce how good this stuff is! If you haven’t made it for yourself, please do. Do it tomorrow. You won’t regret it. I love the fact that you don’t need that much syrup since the yogurt makes it sweet & very creamy!
Here is exactly what I used to make my French Toast:
2 slices of apple cinnamon bread from Sprouts (50 calories each slice and they taste like heaven)
PAM cooking spray
8 oz of Vosko’s Greek Yogurt (found at Sprouts – 24 grams of protein per serving!)
1 packet of stevia ( you can use your favorite sweetener)
1/2 tbsp chia seeds
3 tbsp of sugar free maple syrup
1. Heat griddle or pan to medium high heat and spray with PAM. Scramble egg and dip bread into batter coating boat sides. Please on griddle and cook each side until they’re nice and toasted.
2. While the bread is toasting, mix the yogurt with cinnamon to taste and the packet of stevia.
3. Arrange a slice of toast, add some yogurt, chia seeds & banana slices. Add the other slice and repeat the layers. Add the syrup and
