Chicken Quesadillas (figure friendly)

This Chicken Quesadilla is a healthy version but it’s still packed with a flavor that melts in your mouth. I only added a little bit of cheese since it adds a lot of calories to your food if you don’t watch it. I added just enough to give some cheese taste to it though It’s a quesadilla after all so it’s supposed to taste like cheese! However, the star of this dish is the chicken mixed with the veggies…. Did you think it was going to be the cheese? Jeez! It’s always about adding protein to my dishes! You should know by now! lol!

3 oz Cooked Shredded Chicken (I used rotisserie chicken for this recipe) 
14 g Monterrey Jack Cheese 
1/4 cup Sliced Red Bell Pepper
1/4 Sliced Onions
1/2 Tbsp Extra Virgin Olive Oil
Salt & Pepper to taste
Cumin to taste

Homemade Salsa (Optional) This goes perfect with my Salsa de Sonora! 

Heat olive oil in a pan and saute the bell pepper and onions. When they’re starting to get soft, add the chicken, cumin, salt & pepper. Saute for a couple of minutes.

Heat a skillet on Medium high. To assemble the quesadilla, add the cheese on half of the tortilla. Add the chicken mixture and place on the skillet. Fold the tortilla in half and cook each side until golden crispy. About 1 or 2 minutes each side. Be careful not to burn it since it cooks fast.
