The easiest Shrimp Tacos you will ever make!

I’m telling you, these are the easiest Shrimp Tacos you’ll ever make. What’s better than easy, fast, healthy & delicious? Can you believe I’m eating this during contest prep at 4 weeks out? Yum!


Shrimp Tacos




Ingredients
1 lb of shrimp and cut into thirds
8 oz fat free Greek style yogurt (I use Voskos)
¼ cup chopped cilantro
3 tbsp fresh lime or lemon juice
A pinch or two of cayenne pepper
½ a head of cabbage, shredded
8 corn tortillas
1 tbsp of extra virgin olive oil
Salt and pepper to taste
Essence from  Emeril – see recipe below


Directions


Mix yogurt, cayenne, salt & pepper, lime juice and chopped cilantro, in a small bowl, set aside.


Sauté shrimps in a little bit of olive oil and season with salt, pepper and a dash of Essence over medium heat just until done. They cook up in just a few minutes… so be sure to watch them!


Heat tortillas over medium heat in a dry skillet until warm and starting to form small brown spots. Set aside on a plate covered with a clean kitchen towel.


Now just build your taco! Place a scoop of cabbage on the warmed tortillas taco, then top with shrimp, and cilantro sauce… enjoy!


Serves 4.


Note: I’m not posting the calorie & macronutrient breakdown since it could vary depending on the tortillas you use or the brand of Greek Yogurt. 

Essence from Emeril Lagasse  – BAM!!!

Ingredients

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Directions

Combine all ingredients thoroughly.
Yield: 2/3 cup
(I use Essence to spice many things: Chicken, Fish, Shrimp, Pork Roast, Pastas, Etc. so I always make sure to have some handy)
