Salsa Fresca (Pico de gallo)

One food that saved my contest prep meals from being boring is Salsa Fresca – or commonly known as “Pico de Gallo” in the US (in Mexico Pico de Gallo is something very different but we won’t go there right now). I always have Salsa Fresca at home since you can use it in so many dishes!
Just to name a few:
On eggs
Fajitas
Make a taco bowl with brown rice, 97% ground beef and salsa
On your chicken, or steak
Make shrimp ceviche by adding cooked shrimp

Ingredients:
4 roma tomatoes
1/4 of a medium white or yellow onion
1 jalapeño (or more depending how hot you want it) – remove the seeds.
A bunch cilantro
2 Tbsp of tomato sauce
Lemon or lime juice to taste ( I add about half of a lime since I LOVE lime)
Salt and pepper to taste
Method:
Chop all vegetables and mix all ingredients. Easy peasy!
The key for me is to hand chop the vegetables so that all of the pieces are about the same size. Using a food processor would make the veggies mushy and it takes away from the freshness.
