Choco Chip Protein Oatmeal Bake

Wow!  A breakfast under 300 calories that tastes more like dessert than something that is good for you? Who said you couldn’t have chocolate for brekkie? Certainly not me!

I feel like I’m on a roll these days and can’t stop posting recipes! I actually have a backload of recipes I want to share but I don’t want to overwhelm you all 😀 so I need remind myself to take my time. But for now I’m sharing this quick, easy, delicious dish but the best part is that it’s actually healthy.

Choco Chip Protein Oatmeal Bake 

  • 4 oz plain non fat greek yogurt (I use Voskos
  • 1/2 cup dry oats
  • 2 large egg whites
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 packet of stevia or truvia (or your preferred non calorie sweetener)
  • 1/4 tsp baking powder
  • a pinch of salt
  • 1/2 tbsp milk chocolate chips (about 7) 
  • No calorie syrup (optional)


Directions
Preheat oven to 350°F. Spray with PAM a small ovenproof bowl.


In a small mixing bowl, mix together oats, stevia, baking powder and salt. 

In a medium bowl, whisk the yogurt, egg whites and vanilla extract. Pour dry ingredients into wet mixture and stir until combined. 

Stir in the chocolate chips and pour mixture into bowl. Bake for about 20 minutes or until oatmeal is puffed and set. 

Drizzle with warm syrup
