Watermelon Paletas

We started a new workout routine on Sunday and my entire body is in pain! Don’t get me wrong… I love the muscle soreness I get when we change up the routine or when I go up in weights. I think most weight lifters are suckers for pain and love to get DOMS (delayed onset muscle soreness)! 

On Sunday we did (the husband and I) chest, back & bis. Yesterday we worked legs & tris. Later this week, I’ll be posting the new workout routine once each body part has been covered. Usually the first week we determine the starting weights and we’ll go up from there. So stay tuned for that.

Now let’s move on to the yummy part shall we? It’s hot outside and all you want to do is cool off…paletas (popsicles) are your best treat! Paletas are Mexico’s tradition and no matter what part of the country you go to, you’ll see “Paleterias” or “Señor de las Paletas” selling them on the streets (exactly like the one in HERE). There are countless of flavors and now they even come with chile y limon … yep! that’s right.. lime and chili. They’re so good! It’s hard to pick a favorite. The best part is that they’re all made with real fruit and wholesome ingredients. No preservatives and no chemicals like the ones you buy at the store. 

I finally decided to start making my own since it’s hard to find them where I live. I bought my molds HERE since I wanted the classic look but any kind will do. You can even use dixie cups! I like to make them at home since you have total control of what goes in them. Can you believe these are less than 20 calories per popsicle?  

These won’t be the last popsicles I blog about. Next will be some made with yogurt and berries and even some with tequila maybe? 😀

Watermelon Paletas

They ended up with two colors since the chunks rose to the top but the flavor did not change on the lighter part. The entire paleta is delicious and very refreshing!

5 to 6 cups of fresh watermelon chunks
2 tbsp sugar
1 tbsp stevia in the raw or truvia (I find that these two don’t have an after taste)
1/2 tbsp fresh lemon juice


1. In a blender, puree the watermelon until all chunks are gone.

2. Add in the sweetener and lemon juice. Blend again until everything is mixed well.

3. Pour paletas mixture equally into 10 molds. Attach covers. Insert sticks, leaving 1 1/2 to 2 inches of each exposed. Freeze paletas upright until firm, at least 3 hours or up to 2 weeks. 

4. Hold each mold up to the rim under warm running water just until paletas are released from sides of molds, 5 to 15 seconds. Remove covers and pull out paletas.  

Eat immediately or store in freezer. Recipe makes 10 Paletas.

At 19 calories per paleta I can eat the entire batch! 😀
