Alright guys, let me start this post by saying that you should know I’m all for eating healthy. To me being healthy is about eating in balance. This means eating whole foods, minimal processed foods and everything else in moderation. This also includes the occasional indulge meal that you wouldn’t eat on a daily basis. I really don’t like being a health “snob” and say I would never eat dishes made with sugar, butter or white flour. Everything in moderation right?
I don’t consider these pancakes “healthy” per se but they’re much better than what you would buy in a box. At least you know that what you’re putting in them does not have a bunch of chemicals you can’t even pronounce!!
Having said that, these pancakes are SOOO SO GOOD! You definitely want to make them when you want to treat yourself and want to impress family and friends. The recipe is easy to double so that you can make enough for several people. The amount for this recipe should make about 18 small pancakes.
Mr. Delish and I went to a Bed & Breakfast in Williams Arizona a couple of weeks ago for a nice relaxing weekend and that’s when we had these pancakes. We stayed at the Sheridan House Inn and we were hosted with very savory breakfasts the two mornings we were there. Everything was made from scratch…. even chorizo! We were impressed! So I had to ask Claire, the owner of the house, for the pancakes recipe. I actually wanted the recipe for everything we ate there but that would just be too much! So I had to pick my favorite dish and the pancakes won.

I don’t normally add butter to my pancakes since I like to watch my calories but for this pancakes I made an exception. I never had butter and maple syrup mixed together and what a nice surprise! It was so good! I will keep this butter/maple mix for these pancakes only since I don’t want to over do it. I want the entire recipe to remain “special” and to be something I indulge on once in a while.
Apple Pancakes with Maple Syrup Butter
200g/7 oz self-raising flour (Don’t worry if you can’t find self-raising flour. You can make your own! For each cup of all purpose flour, add 1 1/4 tsp of baking powder and 1/4 teaspoon of salt. Mix well and that’s it!)
100g/3 1/2 oz granulated sugar
1 tsp ground cinnamon
200 ml / 7 fl oz milk
2 apples, peeled and grated
1 tsp butter
Maple Syrup Butter
85g /3 oz butter, softened
3 tbsp maple syrup
Mix the flour, sugar and cinnamon together in a bowl and make a well in the center. Beat the egg and the milk together and pour into the well. Using a wooden spoon, gently incorporate the dry ingredients into the liquid until well combined, then stir in the grated apple.
Heat the butter in a large non-stick frying pan over a low heat until melted and bubbling (I only use a little dab of butter just enough for the pancakes not to stick to the griddle).
Add some pancake mixture enough to form about 3 inch circles. Cook each pancake for about 1 minute, until it starts to bubble lightly on the top and looks set, then flip it over and cook the other side for 30 seconds, or until cooked through. The pancakes should be golden brown.
To make the maple syrup butter, melt the butter with the maple syrup in a saucepan over a low heat and stir until combined. You can even add a splash of cinnamon for an extra kick.
