P I N_______I M A G EI love the simplicity of couscous.  I mean, you boil water or chicken/vegetable stock, you throw the couscous in there, cover it for 5 minutes (heat off) and BOOM! It’s ready! Add your favorite ingredients or even plain with just some salt and pepper and your dish is ready in 10 minutes. It can’t get simpler than that.

It’s also one of my preferred carb options when I’m working on “de-fluffing” (a.k.a. getting lean) since it has less calories than let’s say brown rice.  I LOVE to eat so I have to go for what gives me the most volume for the same amount of calories ;). Do you have a bottomless pit like a do?

Couscous with Herbs, Apples & Cranberries

Ingredients
  • [b]Couscous:[/b]
  • 1 couscous
  • 1 1/4 cups low-sodium chicken broth
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1 tablespoon chopped fresh rosemary leaves
  • 1/2 teaspoon chopped fresh or dried thyme leaves
  • 1/2 medium green apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup slivered almonds Cook's Note
  • [b]Vinaigrette:[/b]
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1/2 tablespoon maple syrup
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
Instructions
  1. In a small bowl, combine the vinegar, maple syrup, salt, and pepper. Whisk in the olive oil until smooth. Set aside.
  2. Bring the chicken broth to a boil and a add the couscous. Remove from heat and let it sit for 5 minutes. Fluff with a fork and let it cool for 5 minutes.
  3. Add the apple, dried cranberries, parsley, rosemary, thyme, and almonds.
  4. Add the vinaigrette over the couscous and toss to coat evenly.
