Let’s talk pancakes shall we?

I truly enjoy making pancakes. I have to admit, that my experimenting with new recipes is very limited though.  I made these out this world apple pancakes last year (which I’m planning on making them again on Father’s day for brunch), my pumpkin protein pancakes and my protein pb coconut pancakes are as far as I’ve done. If I ever want to make “regular” pancakes I default to a store bought mix that I order from Mexico (sadly you cannot find a store mix as good as this one in the US!!). Usually when a friend/family member travels to Mexico and asks me if I need anything from there, my usual response is this pancake mix please. Oh and maybe some tequila… yes, tequila is always in order:)thank you very much!

Okay, but this post is not about those other pancakes. It is about this new wonderful creation I just made. On the first bite I knew I had found my new favorite healthy pancake. The blend of different flours gives these pancakes a nutty rich flavor that you don’t get with pancakes made with white flour. The oat, buckwheat and brown rice flour make these high in fiber which we all know is good for you! I don’t have a gluten intolerance (knock on wood!) but you can use gluten-free oat flour to make this recipe 100% gluten-free.

I have the feeling these pancakes will be part of our Sunday’s breakfast menu regularly 😉

By the way, did you know that you can make your own oat flour? All you need to do is grind rolled oats to a flour consistency. I use my magic bullet for this and it works like a charm!

The plum compote is just an option for these pancakes with and you’re more than welcome to serve them with your favorite syrup. I just want to use as much fruit as I can these days.

Griddle Pancakes with Plum Compote

Ingredients
  • [b]For the compote[/b]
  • 1 cup plums, quartered or chopped in small chunks
  • 1 cup pure maple syrup
  • dash of cinnamon
  • [b]For the pancakes[/b]
  • 1 cup gluten-free oat flour
  • 2/3 cup yellow cornmeal
  • 1/3 cup brown rice flour
  • 1/4 buckwheat flour
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 1 large egg
  • 2 cups buttermilk
  • 1/4 cup pure maple syrup
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • Cooking spray
Instructions
  1. [b]For the compote[/b]
  2. In a heavy-bottomed pot, combine the maple syrup and cinnamon.
  3. Bring to a boil and add the plums.
  4. Cook over low heat, stirring occasionally, until the fruits soften and break down — about 10 minutes.
  5. Remove from heat to cool.
  6. [b]For the pancakes[/b]
  7. In a large bowl, whisk the oat flour, cornmeal, rice & buckwheat flour, baking powder, baking soda, and salt.
  8. In a small bowl, whisk the egg, buttermilk, and maple syrup.
  9. Combine the dry and the wet mixtures and whisk well. Add the butter and whisk until there no lumps.
  10. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom, about 3 minutes. Turn and brown the other side, about 2 minutes longer.

    Coffee and Crumpets - Ana, these look gorgeous! So much better than other GF pancakes I’ve seen. I need to go on a GF diet but I am having a hard time giving up flour :( I can do it if this is what GF looks like.
