Last Saturday the hubby and I took a weekend trip to the beautiful town of Sedona, AZ. The entire highlight of the trip was to eat at our favorite Mexican Restaurant Elote Cafe.  We went to that restaurant for the first time last year and just loved it.  The food is just exquisite!

The wait to get seated was about 90 minutes, but so worth it! When the hostess calls your name to be seated everybody claps for you! Everyone knows what you’re about to experience and they get happy for you. That’s what I call team spirit!

I don’t have any “celebrities” that I truly admire or that I would go crazy about if I saw them, but when Chef Jeff Smedstad came out of the kitchen to deliver someone’s appetizer I got all excited! He came out randomly to deliver his customer’s food and most people didn’t even know that he was “THE” Chef! I started praying that he would deliver something to our table lol! When he came out of he kitchen holding two bowls of delicious Butternut Squash Soup I knew we would be the next table to be honored by his presence. We said hi to him and I told him (sounding like a nervous teenage girl) that I had made the recipe for his tamales last year and they came out wonderful! He responded with “I’m sure you made them better than I did”. I can’t believe I had my first “celebrity” crush moment LOL!

I bought his cookbook the last time we visited.  So far the only recipe I’ve made is the tamales masa, which I plan on sharing here later 😉

When you buy a drink at the bar you get this delicious spicy popcorn for the wait. I know the recipe is simple but that’s what makes it even better! When I tasted it I knew it wasn’t just pure chili powder sprinkled on… it had to be a special blend of spices. As soon as I got home from the trip I opened my cookbook from Elote Cafe and there they were….Palomitas and the wonderful recipe for the spice mixture. So here you go, make them for when you have company or just when you want to enjoy some at home with the family or by yourself.

You won’t be disappointed:)

Spicy Palomitas

Ingredients
  • 1/2 tablespoon kosher salt
  • 1/2 tablespoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 teaspoon ground chipotle chile
  • 1 tablespoon ground ancho chile
Instructions
  1. Mix all ingredients and sprinkle as much as you want over fresh popped popcorn.
