We survived an intense week of packing & moving from one place to a new one. Everything happened faster than we anticipated leaving us very little time to prepare all the details of the move. Let me tell ya… do not under estimate the amount of work it takes!!!! I bow to you all that move to a different state (not from one local city to another like I did) and have everything ready to move in 1 day. I don’t think I could do that.

I started packing way ahead of time and still didn’t get everything done. I guess that’s what happens when you have a full time corporate job, a part time business and a blog right? I still have a few items left in my other place that I didn’t have time to pack. Mainly all of my food props. Wow! To see how many things I have accumulated over the past year was an eye opener! Sadly , many I have yet to photograph :(.  The good news is I have a better space to take photos and to organize my props…. that inspires me even more!

On a side note, this post’s photos are very simple as I still have all of my props in my old place (which will be brought home this weekend). Hence the food styling is very minimal 😉 

While packing I realized I have a serious addiction to cake stands! For someone that doesn’t bake cakes that often I have eight of them! There is something whimsical about cake stands that just make me want to have them all. I truly adore the look of cake stands and often use them to display food (even if it’s not a cake) during family & friends gatherings. Fortunately I recognized I had an “issue” before this move and stopped myself from becoming a hoarder. It was hard! I drool over cute cake stands whenever I see them and think I could use a few more to complete my “collection” 😉

These cookies only require 4 ingredients and are so easy to make! It will definitely take care of your sweet tooth while being able to stay on track for your healthy eating. They are sooo good!

Healthy Banana Chocolate Chip Cookies

Serves: 10
  • 2 ripe bananas
  • 1 cup rolled oats, grind into flour consistency (see note below)
  • 45g (1/3 cup) mini chocolate chips (dark or milk)
  • 1 tablespoon natural peanut butter (I used [url href=”” target=”_blank”]White Chocolate Wonderful from Peanut Butter & Co.[/url])
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, smash the bananas with a fork.
  3. Add the oat flour and mix well.
  4. Add the peanut butter and mix well. Fold in the chocolate chips and mix well.
  5. Bake on a cookie sheet for 15 minutes.
  6. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
  7. Enjoy!
  8. Note: to make your own oat flour, simply grind your oats in a food processor, blender or magic bullet. It should reach the flour consistency in about 1 minute. If needed, shake the flour a little bit in the processor and pulse for another 30 seconds or so.
  9. cup of oats yields about 1 cup of oat flour.
