I usually don’t like to publish my posts on Fridays or the weekends since I think it has less success on reaching people. You know, people start getting excited for the weekend and spend less time on-line (as it should be!) but I didn’t want to start the new year on a bad note and not publish anything this week. Since we all have good intentions at the start of the year, I created this Hearty Couscous Salad to help you stay on track plus give your taste buds a little trip to heaven! The crunchiness of the cucumber, jicama & bell pepper goes perfect with the flavorful but light chipotle vinaigrette. I ate this salad for lunch during the course of two days and now that I’m looking at the photos I can’t stop craving it again. It’s truly delicious!
